Sick Day Soup

I just got a great recipe from my supervisor at work.  The crud is going around and this is a sure fire recipe to make you feel better.

Sick Day Soup

serves about 4

Prep time:  10 minutes (at the most)
Cooking time:  30 minutes

Ingredients:
     3 lb bone in chicken pieces (I have used chicken carcass and chicken thighs)
     3 medium carrots, peeled
     2 medium onions
     2 medium celery stalks
     4 cups of low fat chicken broth
     2 cups of white wine (used Fetzer         Gewürztraminer)
     1 tsp dried tarragon (I have also used fresh thyme from my deck herb ladder--see previous post on how to make your own)
     handful of freshly grated parmesan cheese
     2 TBSP olive oil


Preparation

1. Roughly chop the carrots, onions, and celery stalks 

2. In a soup pot, saute the chicken pieces in olive oil 

3. Season with salt and pepper 

4. Add the vegetables and salute for a few more minutes. Should be starting to smell real good!!!! 

5. Add the chicken broth, cover and simmer for 10 minutes, then add the wine and continue to simmer for 20 minutes. 

6. Just a pinch of parmesan before serving.  I serve with some lightly buttered posted artisanal bread.


If the soup doesn't make you feel better, the leftover wine surely will!!!!!!
